• White Wine

    Ribas Blanc

    It is our freshest entry wine, the most frank and varietal expression of our Prensal Blanc vineyards that grow in a warm and sunny Mediterranean environment, tempered by gravelly soils and a gentle sea breeze. We accompany Prensal Blanc, the island’s main white variety, with Giró Ros, a local variety that was almost lost and only recently recovered, to add a touch of intensity.

    Pale yellow color with bright green hues.

    It shows a range of fresh aromas such as pear, apple and quince along with floral hints of orange blossom.

    The attack is fresh, lively and youthful, with aromas of pear and appel and a slight hint of white flowers.

    Pairing Suggestions

    Ideal to enjoy with appetizers, salads and fish.


    Elaboration

    Made from a selection of Prensal Blanc vineyards, harvested by hand between the end of August and mid-September. The older, goblet-trained vines, with greater clonal diversity, are the first to ripen as they are planted on shorter soils and provide length on the palate. The younger vines, planted in deeper soils and coming from a mass selection of the old vines, are harvested from September onwards, and give the wine freshness on the nose and a more fluid passage through the mouth.

    A small percentage of Giró Ros, also a local variety, contributes to the whole by accentuating the primary aromas of the grape.

    Manual selection of the bunches in the winery, eliminating those that do not meet the quality criteria. Pressing at low pressures -maximum yield 67%- with Inertys closed press, which enhances the fruity aromas thanks to the protection against oxidation during pressing. We are currently in trials with our own yeast and ferment in stainless steel tanks at 13-15ºC for 40-45 days. Very gentle fining to eliminate possible bitter notes and low sulphur content.

  • Rosé Wine

    Ribas Rosat

    The study of Mantonegro and its behaviour according to the age of the vines has allowed us to select the most suitable plants for the production of this wine. We aim for fresh fruit and moderate alcohol content, for which we chose younger vines planted in deeper soils.
    A delicate treatment of the grapes and the direct pressing of whole bunches allow us to obtain a fine wine with subtle fresh aromas and a refreshing taste.

    Expressive with notes of wild red fruit, pomegranate, redcurrants, pink grapefruit, white peach and fresh balsamic notes.

    On the palate is fresh and fluid, with repeated aromas of fresh red fruit.

    Pairing Suggestions

    Ideal with Mallorcan “Tumbet”, pasta, sushi and rice dishes.


    Elaboration

    Early and manual harvesting of Mantonegro grapes from our vineyards with deeper soils and a higher percentage of clay, in order to produce fresher wines. In the winery, the bunches are selected on a sorting table where those that are not in optimal conditions of health or ripeness are eliminated. Pressing at very low pressures – maximum yield 55% – to avoid oxidation and extraction of heavy polyphenols from the skins and thus highlight the primary fruit aromas. Fermentation of the must in stainless steel tanks at 13-15ºC for approximately 30 days with a selected indigenous yeast from our vineyards, thanks to a collaboration project with the University of the Balearic Islands. Very gentle clarification to eliminate possible bitter notes and low sulphur content added.

  • Red Wine

    Ribas Negre

    In this wine we want the Mediterranean character of Mantonegro to stand out, we aim for an intense but smooth entry. The fruit of the Mantonegro in it’s most open and straightforward version, with no frills. The rest of the varieties are mere companions.

    Appearance

    Red bigarreau cherry with violet hints.

    Nose

    Expressive nose with aromas of red fruit, berries, plums, liquorice and balsamic notes.

    Palate

    Intense and balanced, with a sensation of volume but fluid, well-integrated ripe tannins and aromas of fresh wildberries and prune together with spices.

    Pairing Suggestions

    Majorcan cuisine like arroz brut, burballes and fideus de vermar or Beef stews.


    Elaboration

    Selection of Mantonegro vineyards planted on shorter and more limiting soils, with the aim of improving homogeneity and phenolic ripeness in a variety that is very plastic and variable depending on the terroir.

    The Mantonegro is accompanied by the Mediterranean variety Syrah, which is well adapted to our terroir and provides depth and structure to the blend.

    The grapes are traditionally harvested by hand and then passed through two sorting tables: in the first sorting, bucnhes that are not in the best sanitary conditions are removed and the less ripe bunches are reserved for making rosé. In the second sorting, which is carried out on the grapes after destemming the bunches, the green berries and stalks are discarded.

    Fermentation with our own yeasts in concrete tanks at moderate temperatures of between 25 and 27ºC, with gentle maceration to extract the primary red fruit aromas of the Mantonegro and the soft, round tannins of the Syrah, without obtaining heavy polyphenols. Subsequent ageing for 12 months in 3500 litre oak vats and 500 litre barrels in order to soften the tannins and allow early consumption of the wine without the need for bottle ageing.

  • White Wine aged in barrel

    Sió Blanc

    White wine well suited for laying down made from our old vines of Prensal with Giró ros and Viognier aged on barrel. We are looking for length and complexity. The Prensal variety stands out for its finesse in the nose when the vines are young, but only the older vines will bring the structure and length required by the wine to age well. Besides the age of the vines, the vineyard management is also fundamental. It is important to limit the production, to make a strict control of the fruit to avoid overripeness and to keep the right acidity that will allow a long aging in the barrel and in the bottles.

    Nose

    Great aromatic complexity with notes of citrus, stone fruit like apricots and white peach, tropical fruit such as pineapple and hints of white flowers and almond leaf.

    Palate

    It is well-balanced and rich, with a refreshing mineral entry and a certain structure in the mid-palate that lengthens the aftertaste.

    Pairing Suggestions

    Ideal with fish, lobster with potatoes, pasta or stewed white meats.


    Elaboration

    Selection of Prensal, Giró and Viognier plots with the aim of achieving a white wine for ageing, seeking complexity and structure. The native Prensal variety, delicate and herbaceous, comes from our oldest bush vines with lower yields, located in the original plot in the centre of the vineyard and cultivated in a respectful manner since the 17th century. The Giró, a recently recovered local pre-phylloxera variety, is characterised by its greater aromatic complexity and better ageing potential than Prensal, which allows part of it to be fermented in barrels. Viognier is the most suitable for barrel ageing and adds structure to the whole. The grapes are harvested by hand and the bunches are strictly selected and pressed at low pressures in a closed Inertys press. We are currently in trials with our own yeast fermenting at 15-16ºC for 35-40 days. Partially fermented and aged on its lees in 500 litre French oak barrels for 5 months. Very gentle filtration and low sulphur content added.

  • Vino Rosado

    Sió Rosat

    In the midst of the rosé revolution, which is becoming increasingly more complex, we are seeking to produce a gastronomic wine that shows the uniqueness of the ancestral Mallorcan variety Gargollassa.
    This wine is the result of more than a decade of experimentation and a lot of effort to recover a local variety, which inexplicably was on the verge of extinction.
    Ancient documents, including the famous collection of Archduke Ludwig Salvator, describe it as one of the most recommended varieties for the production of quality wines in Mallorca.
    The last year in which the Gargollassa appears in the inventory of authorised varieties was 1979, shortly after which it disappeared from the wine-growing scene, probably due to its low yield and therefore, little interest in planting it. Years later, at the end of the 1990s, when the main attraction of a variety was the quality of the wine produced and not the quantity of grapes, the recovery of Gargollassa created a great deal of expectation and a search was made for plants that may have been left on unclassified estates. In 1998, Bodega Ribas managed to locate the only 3 remaining specimens on the island, and after years of experimentation and multiplication, presented this variety of singular character with great individual potential. This pre-phylloxera variety, descendant of the Heben and Monastrell varieties, has come to remind many of a Pinot Noir due to its delicate and elegant nuances.

    It stands out for its great mineral freshness and its delicate aromas of red flowers and redcurrants.

    The attack is refreshing, tense, with a marked floral and saline character.

    Ideal with “frit de marisc”, crustaceans, salads, white meats and rice dishes.


    Elaboration

    Produced from the vineyards of our Can Ribas estate, whose short, stony soils contribute to low yields and increased concentration. Gargollassa, a pre-phylloxera variety recovered in the 2000s, provides the mineral and floral freshness, and our Callet from old vineyards planted in bush vines, provides the red fruit. The grapes are harvested by hand and selected in the winery. Pressing at very low pressures – maximum yield 58% – with Inertys closed press, which enhances the primary and fruity aromas thanks to the protection against oxidation during pressing. Fermentation with indigenous yeast in stainless steel tanks at 14-16ºC for approximately 25 days. Very gentle filtration to respect the complexity. It is made with very little sulphur dioxide.

  • Red Wine

    Sió Negre

    This wine made mainly with Mantonegro from old vines was created as a tribute to our grandmother Sió (or Concepció), who supported the modernisation of the winery by her daughters just over 3 decades ago. Our priority is to achieve the balance of the wine from the vineyard. The Mantonegro variety stands out for its great aromatic expressiveness, but it has a tendency to produce excessively warm, oxidative wines with high alcohol content. In Sió, concentration and varietal typicity are sought, but without renouncing freshness, which can only be the result of an adequate management of the old vineyard. The characteristic pebbles that cover the Can Ribas vineyard help to counteract the adverse climatic effects and avoid uneven vintages.

    Appearance

    Bigarreau cherry red colour with garnet rim.

    Nose

    Intense and complex with dominant black fruit such as black cherry and plum and spicy hints of vanilla, cinnamon, cocoa and balsamic notes.

    Palate

    On the palate is balanced, dry, with a certain structure and juicy. Aromas of fresh black fruit, refreshing balsamic notes and a sensation of minerality.

    Pairing Suggestions

    Grilled meat, royal hare or red meat stews.


    Elaboration

    Harvested from our vineyards with the greatest potential on the Ca’n Ribas estate, where grapes have been grown for more than three centuries, with the aim of increasing the complexity and concentration of the Mantonegro. The low yields, caused by the old age of the vines or the early elimination of part of the harvest, facilitate optimum phenolic ripening.

    The blend is complemented by the Mediterranean Syrah variety, which provides structure and allows for longer ageing.

    Traditional harvesting by hand and subsequent passage through a double selection table: in the first selection, the least ripe bunches are eliminated, which are reserved for making rosé, and in the second selection, the grapes that do not meet the requirements are eliminated; the grapes must be ripe and in a good state of health.

    Fermentation with indigenous yeasts in concrete tanks at moderate temperatures of between 25 and 27ºC, avoiding overmaceration to extract the primary red fruit aromas of the Mantonegro and the soft, round tannins of the Syrah. Ageing in 500 litre French barrels for the Mantonegro and 225 litre barrels for the Syrah for one year to polish the tannins.

  • Sweet White Wine

    Sioneta Blanc

    Naturally sweet late harvest wine produced from small bunches of small-berried Muscat grapes that have been over-ripened and dried on the vine.

    Nose

    Exotic and floral, aromas of grape juice, white flowers and fresh herbs together with some tropical fruit like litchi.

    Palate

    A pleasant feel in the mouth, intense freshness and a great fruit intensity. Great balance between sweetness and acidity.

    Pairing Suggestions

    Ideal with foie gras, cheeses and deserts with fruit.


    Elaboration

    Late harvest of Moscatel de Frontignan bunches, which were left to over-ripen on the plant to achieve a higher sugar concentration by dehydration of the grapes.

    Manual selection in the vineyard and on the sorting table is essential to eliminate green bunches or bunches with symptoms of rot. Delaying the harvest is a risk and a significant loss of production, but it is the only way to increase the sugar percentage. Pressing of the clusters in a pneumatic press at higher pressures than other white wines in order to extract the contents of the raisin grapes. Fermentation in 500-litre barrels at 14ºC with our own yeasts that have been selected for their sensitivity to changes in the environment. When we achieve the ideal proportion between sugar and alcohol, we interrupt the fermentation by applying cold. The wine remains in the barrel, with its lees, for a total of 6 months.

  • Sweet Rosé Wine

    Sioneta Rosat

    Naturally sweet late harvest wine produced from small bunches of small-berried of Mantonegro grapes that have been over-ripened and dried on the vine.

    Aromatically it is dominated by red fruit such as strawberry, raspberry or cherry, with a touch of red flowers.

    Palate

    The attack is sweet, fresh and fruity, with a good balance between acidity and sugar. Great balance between acidity and sugar.

    Pairing Suggestions

    Perfect with cheesecake and fresh fruit such as strawberries and cream.


    Elaboration

    This wine is the result of the strict selection of the clusters of Mantonegro grapes from the old vineyard: the ripe grapes are used to make the red wines and the overriped bunches are used to make Sioneta Rosat. After spending 24 hours in a cold chamber at 2ºC to prevent oxidation, the grapes are pressed at low pressure, and a rosé juice with high concentration of sugar is obtained. The yield is extremely low, 2 kilos of dried grapes producing a half-liter bottle of wine.

  • Red Wine

    Ribas de Cabrera

    This wine is the result of an exhaustive study of the Mantonegro variety, of its clones and of the specific soil of the Can Ribas vineyard. The aim of such investigation is to be able to show the different sides of the variety depending on the management of the vineyard, which in the case of Ribas de Cabrera appears through aromatic complexity and expression of the terroir, highlighting the sweet appeal of the black fruits specific to the variety and the fresh, balsamic and mineral notes typical of the old vines.

    Representative of the great potential of Mallorca’s oldest Mantonegro vines; Ribas de Cabrera is made only in years of exceptional harvest from a selection of the best vine stocks and clusters.

    The first nose is intense and complex, with a predominance of ripe black fruit, spices such as vanilla, cocoa, cedar and liquorice, mineral notes and balsamics.

    Palate

    It has a serious entry, with structure and breadth but with freshness, nerve and finesse, with a long rich and mature finish.

    Pairing Suggestions

    Pigeon on its demi-glace, game meats or concentrated stews.


    Elaboration

    Wine made only in vintages that allow us to achieve a Mantonegro of great depth and complexity. This requires the year prior to harvest to have a cold winter, a moderate summer and well-distributed rainfall, so that phenolic maturity is reached slower, allowing the concentration of polyphenols and anthocyanins to increase without over-ripening.

    The oldest vineyards, which were planted in bush vines between the 1940s and 1960s, are ideal for producing this wine as they are planted in the best area of the vineyard, which is of alluvial origin and covered with boulders. The low production of the vines, also due to the age of the plant, also contributes to the concentration.

    A small percentage of Syrah makes it possible to lengthen the ageing of our longest-aged wine.

    The selection of the grapes begins in the vineyard, where a rigorous screening process is applied in which only the best bunches are harvested by hand for this wine. On arrival at the winery, another selection takes place: in a first sorting process, the least ripe bunches are eliminated, which are reserved for making rosé, and in a second sorting process, the grapes that do not meet the quality criteria are eliminated.

    Fermentation by indigenous yeasts in concrete tanks or oak vats at temperatures between 26 and 28ºC, prolonging the macerations up to 5-6 weeks to increase extraction and thus complexity. Subsequent ageing of the Mantonegro in 500-litre barrels and of the Syrah in 225-litre barrels in order to round off the wine.

  • Red Wine

    Desconfío de la gente que no bebe

    “I don ́t trust anyone who doesn ́t drink” – Humphrey Bogart.
    This phrase said by many, and attributed to Bogart, has been following me for over 20 years, when a journalist used it to title an interview done to my Aunt Joana Oliver (then co-owner along with my mother of Bodega Ribas). The accuracy of this statement was the equivalent of a sentence that left a mark on me and inspired me to try to get rid of any subterfuge that could nurture distrust (if you do not drink it will not be because of a lack of quality).

    Too much time hearing voices having no faith on the quality on the Mantonegro variety, doubting about its capacity to hold a complete and complex wine, particularly when it comes from Mallorca’s oldest vines.

    Thus, after some personal failures and many foreign ones, we are presenting a wine that in our opinion does justice and ennobles our native variety. And, finally it allows the enjoyment of its singularity without any complements to disguise it.

    Appearance

    Clean and light ruby red colour.

    Nose

    It has a great aromatic complexity with red fruit such as redcurrants, cherries and strawberries, black fruits such as blackberries and plums, dried herbs, carob, black liquorice, spicy notes, undergrowth and balsamic notes.

    Palate

    The entry is dry, with volume, ripe, well-integrated tannins and a certain tension. A wine with presence, long and expressive finish with notes of black fruit, dried herbs and balsamic notes.

    Pairing Suggestions

    Ideal with “Fideus de veremar”, “arroz brut”, lamb shoulder or stewed meats.


    Elaboration

    This single varietal can only be produced when the Mantonegro is delicate and perfumed. The primary aromas must be present and at the same time depth and nerve are required. It shares vineyards with Ribas de Cabrera, but the grapes do not remain on the plant as long, in order to achieve a more fluid and lively wine.

    The grapes go through a triple selection, the bunches are supervised in the vineyard and again in the winery, and the grapes that do not meet the established parameters are discriminated; overripe or green bunches and those that are not in perfect sanitary conditions must be avoided.

    Fermentation, which is carried out by our own yeasts selected from our vineyard, takes place in concrete tanks or oak vats at moderate temperatures of between 25 and 27ºC and maceration is extended for a total of 4-5 weeks. Subsequently, the “flor” wine and the first part of the press wine are transferred to 500-litre barrels and 2,500-litre foudres to refine the tannins, where they remain for a year.

  • White Wine

    Soma

    The choice of the variety comes from Javier Servera Ribas’ first professional experience with the wine maker Jean Luc Colombo, who introduced him in 2005 the atypical grape variety by then.
    After returning from France, he presented this variety to his aunt, Sioneta Oliver, who suggested making a new single varietal wine and gave the land for the plantation, hence her name appears on the label.
    Viognier has adapted perfectly well to the Mediterranean and to the sandy, chalky soil of the Consell vineyards, which greatly limits its production and allows us to obtain this particular version of Viognier.

    Appearance

    Clean and bright straw yellow colour with steely hues.

    High aromatic intensity showing a range of fresh tropical aromas such as papaya or green banana, notes of stone fruit such as peach and hints of white flowers.

    Palate

    The attack is dry, fresh and fluid, with a good aromatic intensity that lengthens in the aftertaste where citrus notes and a slight sensation of volume accompany it making it more gastronomic.

    Pairing Suggestions

    Ideal with “Sopes Mallorquines”, fish or oriental cuisine.


    Elaboration

    The grapes are harvested by hand before being strictly selected, bunch by bunch, at the triage table to guarantee the highest quality. The aim is to achieve the best Viognier possible, a variety with great aromatic potential. The grapes are gently pressed at low pressure in a pneumatic press to prevent oxidation and to maintain the primary aromas.

    L’Amo en Joan

    This is a tribute to our vineyard manager l’Amo en Joan, who in 2017 turned 90 years old. Joan Colom has dedicated most of his life looking after the Can Ribas vineyards, following the family tradition. The Mantonegro vines that produced this wine were actually planted by him, when he started working at the winery, and the traditional approach evokes the wine making style used a few decades ago, when the spicy notes used to be more dominating in wines.

    Meat and rice dishes, red meat roasts, lamb roast. Iberian Ham. Sheep cheeses.


    Elaboration

    The grapes are harvested by hand before being strictly selected, one by one. Long maceration for greater extraction. Created from grapes carefully selected among the best ripe bunches from the oldest Mantonegro vines. The grapes from 25-year-old Syrah and vines also give it structure and depth.

The Sió line

THE LOVE FOR A JOB WELL DONE

The Sió line takes its name and signature on the label from the mother of the owner, a woman who is remembered for her generous and strong character and died prematurely leaving as a legacy her love for a job well done.

The wines proceeding from the old Mantonegro or Prensal vines are complex and deep, and just like the Sió who inspired the creation of these wines, they are rich in delicate nuances.
