Ribas Blanc
This wine represents the return to simplicity and frankness, since up until not so long ago, the white Majorcan varieties would tend to get lost in fancy blends. We have eliminated the influence of other varieties like Chardonnay, to try to capture the delicate and elusive aromas of the Prensal Blanc variety. Our aim is that our young vines of Prensal provide the wine the fresh characteristic primary aromas. The old vines on the other hand, bring an unusual length with a lively and slightly bitter ending.

Elaboration
The grapes are harvested by hand before being strictly selected, bunch by bunch, at the triage table to ensure the highest quality. The grapes are gently pressed at low pressure in a pneumatic press to prevent oxidation. Long fermentation in stainless steel tanks at low temperatures of approx. 14ºC for about 40 days to retain the subtle varietal aromas.

En plena revolución de los rosados, que cada vez van ganando más en complejidad, buscamos elaborar un vino gastronómico que muestre la singularidad de la variedad ancestral mallorquina Gargollassa.
Este vino es el resultado de más de una década de experimentación y de mucho esfuerzo por recuperar una variedad local, que de manera inexplicable se encontraba al borde de la extinción.
Antiguos documentos, incluyendo la célebre colección del archiduque Luis Salvador, la describen como una de las variedades más recomendadas para la elaboración de vinos de calidad en Mallorca.
El último año en el que la Gargollassa aparece en el inventario de variedades autorizadas fue en 1979, poco después desaparece del panorama vitícola probablemente debido a su bajo rendimiento y por lo tanto, poco interés en plantarla. Años más tarde, a finales de los 90, cuando el principal atractivo de una variedad estaba en la calidad del vino producido y no en la cantidad de uva, la recuperación de la Gargollassa crea mucha expectación y se buscan plantas que hayan podido quedar en fincas sin catalogar. En 1998, Bodega Ribas consigue localizar los 3 únicos ejemplares que quedan en la isla, y tras años de experimentación y multiplicación, presenta esta variedad de carácter singular con un gran potencial individual. Esta variedad pre filoxérica descendiente de las variedades Heben y Monastrell, ha llegado a recordar a muchos a una Pinot Noir por sus matices delicados y elegantes.Year : 2022

Elaboration
Vendimia manual de viñas propias. Posterior paso de la uva por mesa de selección donde serealiza un estricto control de calidad. Prensado suave de los racimos a bajas presiones en prensa neumática para evitar la oxidación. Fermentaciones largas en depósitos de acero inoxidable a bajas temperaturas de aproximadamente 14ºC durante unos 40 días para conservar la sutileza de los aromas varietales.

Ribas Rosat
This is one of our wines that has changed the most in the past years. The study of the Mantonegro variety and its behaviour depending of the age of vinesstocks has allowed to select the most appropriate vines for this wine. We pursue the fresh fruit and moderate alcohol strenghth. It represents the search of the maximum varietal expression of the native grape Mantonegro, which stands out in the nose for its intense recollection of red fruits. A delicate treatment of the grapes and direct pressing of the whole clusters allow for other aromas to complement the red fruit, like subtle crisp notes of tropical fruit and citrus.

Very versatile. Apéritifs, Majorcan cuisine (tumbet, sopas mallorquinas), pasta and rice dishes. Seafood. Ideal with Asian and Peruvian cuisine.
Elaboration
The grapes are harvested by hand before being strictly selected, bunch by bunch, at the triage table. The grapes are gently pressed to preserve the primary aromas of red fruit. Separate fermentation of the different varieties in stainless steel tanks at approx. 12-14ºC for about 30 days.

In this wine we want the Mediterranean character of Mantonegro to stand out , we aim for an intense but smooth entry. The fruityness of the Mantonergo in its most open and straightforward versión, with no frills. The rest of the varieties are mere companions.

Elaboration
The grapes are harvested by hand before being strictly selected, one by one, at the triage table to control the quality of the grapes. Followed by fermentation at moderate temperature between 25 and 27ºC to avoid over-maceration and to obtain the primary aromas of red fruit from Mantonegro and the smooth and round tannins of Cabernet, Syrah and Merlot. Followed by a 12-month aging period in second and third year.

White Wine aged in barrel
Sió Blanc
White wine well suited for laying down made from our old vines of Prensal, Giró ros and barrel aged Viognier. We look here for length and complexity. The Prensal variety stands out for its finesse in the nose when the vines are young, but only the older vines will bring the structure and length required by the wine to age well. Besides the age of the vines, the vineyard management is also fundamental. It is important to limit the production, to make a strict control over the maturity of the fruit to avoid overripeness and to keep the right acidity that will allow a long aging in the barrel and in the bottles.

Red Wine
Sió Negre
This wine made mostly of old Mantonegro vines was conceived as a tribute to our grand-mother Sió (or Concepció), who was the one who backed up the modernization of the winery by her daughters, a little over 3 decades ago. Our priority is to obtain the balance of the wine directly from the vineyard. The Mantonegro variety stands out for its great aromatic expressiveness, but tends to produce wines excessively warm, oxidative and with a high alcohol strength. With Sió, we look for concentration and varietal tipicity without giving up freshness. That can only be achieved with the appropriate management of the old vines. The characteristic river stones that cover the vineyard of Can Ribas help counteract the adverse climate effects and to avoid strong differences between vintages.

Bright cherry red with a hint of purple.
Nose
Powerful and complex aroma with dominating black fruit aroma (prunes and cherries), with mineral and balsamic notes as well as spices (nutmeg, cinnamon, cocoa).
Palate
Quite fresh in attack, very well balanced on the palate with sweet and velvety tannins. Complex wine, rich in nuances, very representative of the Majorcan terroir.

A pleasant feel in the mouth, intense freshness and a great fruit intensity. Great balance between sweetness and acidity.

Ideal with foie gras, blue cheese, white meats.
Elaboration
The clusters of grapes have to remain on the plant until the beginning of October (an extended ripening of more than 30 days). The harvested bunches are partially dried and pressed manually in a small vertical press. This grape juice rich in sugars and aromas is fermented and aged for 6 months in oak barrels. The yield is extremely low, with each plant producing no more than half a litre of wine

Elaboration
This wine is the result of the strict selection of the clusters of Mantonegro grapes from the old vineyard: the ripe grapes are used to make the red wines and the overriped bunches are used to make Sioneta Rosat. After spending 24 hours in a cold chamber at 2ºC to prevent oxidation, the grapes are pressed at low pressure, and a rosé juice with high concentration of sugar is obtained. The yield is extremely low, 2 kilos of dried grapes producing a half-liter bottle of wine.

Ribas de Cabrera
This wine is the result of an exhaustive study of the Mantonegro variety, of its clones and of the specific soil of the Can Ribas vineyard. The aim of such investigation is to be able to show the different sides of the variety depending on the management of the vineyard, which in the case of Ribas de Cabrera appears through aromatic complexity and expression of the terroir, highlighting the sweet appeal of the black fruits specific to the variety and the fresh, balsamic and mineral notes typical of the old vines.

“I don ́t trust anyone who doesn ́t drink” – Humphrey Bogart.
This phrase said by many, and attributed to Bogart, has been following me for over 20 years, when a journalist used it to title an interview done to my Aunt Joana Oliver (then co-owner along with my mother of Bodega Ribas). The accuracy of this statement was the equivalent of a sentence that left a mark on me and inspired me to try to get rid of any subterfuge that could nurture distrust (if you do not drink it will not be because of a lack of quality).Too much time hearing voices having no faith on the quality on the Mantonegro variety, doubting about its capacity to hold a complete and complex wine, particularly when it comes from Mallorca’s oldest vines.
Thus, after some personal failures and many foreign ones, we are presenting a wine that in our opinion does justice and ennobles our native variety. And, finally it allows the enjoyment of its singularity without any complements to disguise it.

The choice of the Viognier variety comes from Javier Servera Ribas’s first professional experience with the winemaker Jean-Luc Colombo, who in 2005 introduced him to the then atypical variety that had just come to light in the world of wine. At his return from France, he introduced the wine to his aunt, Sioneta Oliver. She proposed to make a new monovarietal wine and gave the fields required to plant the new vines. That is why her name is on the label of the bottle. Viognier has adapted perfectly to the Consell vineyard and its sandy and calcareous soil that keep the production down and allows for this unique version.

L’Amo en Joan
This is a tribute to our vineyard manager l’Amo en Joan, who in 2017 turned 90 years old. Joan Colom has dedicated most of his life looking after the Can Ribas vineyards, following the family tradition. The Mantonegro vines that produced this wine were actually planted by him, when he started working at the winery, and the traditional approach evokes the wine making style used a few decades ago, when the spicy notes used to be more dominating in wines.

The Sió line takes its name and signature on the label from the mother of the owner, a woman who is remembered for her generous and strong character and died prematurely leaving as a legacy her love for a job well done.
The wines proceeding from the old Mantonegro or Prensal vines are complex and deep, and just like the Sió who inspired the creation of these wines, they are rich in delicate nuances.
